Tip to make Tangy Tadka

  • Always use Fresh Coriander and Lemon and raw mango it gives an aromatic flavour.
  • Do not cook green chillies too much in oil so make sure whenever you add green chillies, quickly add water so that the crunchiness of the green chillies remains as it is, which gives fresh flavour to your seasoning.
  • Do not boil this seasoning too much because due to sugar it becomes thick after boiling and the thick consistency of this seasoning tastes like chasni but not a seasoning.
  • Always add fresh coriander leaves after turning off the gas. So that coriander remains green in colour otherwise it turned out black which destroy the look n taste of this Tangy Tadka.

This Tangy Tadka Recipe is also called Dhokla Seasoning and Gujaratis called it "Dhokla nu pani", which is essential for Dhokla or Khaman. This Tangy Tadka (seasoning) makes Dhokla or Khaman more spongier n soft. And again, it’s very simple n quick seasoning so let’s start to make this quickly.

Ingredients :
 1 tsp Oil
 1 tsp Mustard Seeds
 1 pinch Asafoetida / Hing
 4 Green chillies
 Curry Leaves
 ¼ cup Sugar
 2 tbsp Lemon Juice
 2 tbsp Fresh coriander leaves
 1 cup water
 Salt to taste

Instructions :

In a pan heat oil, add mustard seeds and let it crackle on a low flame. Add green chilies, curry leaves and when they are crisp, add water. Mix to combine.

Now add hing, Sugar, Salt and cook for few seconds. Don’t boil this seasoning.

Turn off the gas and add fresh coriander leaves and chopped raw mango.
