Instant Coconut Macarons

This easy and Instant Coconut Macaron recipe makes a batch of the most dainty and delicious treat that will float right into your mouth and disappear. I’ve best described all my tips into this post and video to help you out!

For me, milk and cookies has always evoked memories of cold rose milk with sweet butter cookies in the summer at my Grandmother’s place. My brother would complain and demand chocolate milk, meaning I got to guzzle down his share of rose milk too.

And, I always wanted to bring two of my favorite things (Cookies and Rose Syrup) closer than they’ve ever been. Combining the two flavors of my childhood was a no brainer – adding a hint of Coconut was a last-minute addition which worked a treat. So, I united Butter Cookies and Rose syrup and their baby (Instant Coconut Macarons) turned out to be a damn tasty.

These Instant Coconut Macarons make lovely gifts for Festivals or any special day or are great with ice cream after dinner. But my favorite way of serving them is with a glass of cold milk. There’s nothing like a bit of nostalgia around this festival time of year.

Imagine this – the perfect balance of sweet, crunchy and soft in two little discs of happiness. The outer layers are slightly crisp with rose flavor, while the stuffing is soft and loaded with Coconut and milk powder. If you love Cookies and Coconut, you’re going to go insane for these Instant Coconut Macarons.

So, you’re probably thinking that this sounds similar to that French Macarons? Yeah, well it’s definitely not the same as that.

French Macarons are delicate cookies with a crunchy exterior and soft stuffing. They have a nougat-like, chewy texture and can be filled with anything from frosting and ganache. If there’s one thing to know before making French macarons at home, it’s this: these macarons are not simple and easy but requiring BOTH patience and practice.

Instant Coconut Macarons are ridiculously easy and one can prepare in just 5 minutes without cooking or baking procedure. These Instant Coconut Macarons tastes heavenly and instantly down your tiredness and stresses. The soft stuffing erases the furrows in your brow and the crunchy, buttery outer layers fill you with the feeling of home comforts.

What you will need to make these Instant Macarons?

The base ingredients for these Instant Coconut Macaron are Plain sweet cookies, desiccated coconut, Rose syrup, Milk powder, Sugar Powder and Milk.

You can make your own sweet cookies at home and is also a delicious option. However, buying a packet is easier and you get the super-fine texture and thickness needed for Instant macaron.

For my recipe, I went for a plain buttery sweet cookie, I like Britannia Butter Cookies which is easily available in the market or any grocery stores. The only thing I’d say is the cookies must be thick and less sweet. Too sweet or creamy cookies will overpower your coconut macarons and the balance of sweet and crunchy will be all out of kilter.

How to make Instant Coconut Macarons

Take Rose syrup in a bowl and dip a cookie in it and then into the desiccated coconut. Repeat this process with all cookies.

Place them on a plate and let them set in a cool place or in refrigerator for 5 minutes. You should be able to touch the shell and feel a dry surface.

Mix together milk powder, powdered sugar and desiccated coconut in a mixing bowl and mix well.  Once all ingredients are thoroughly combined, make dough like paste by adding little milk at a time.

Divide this mixture into small equal balls and press them with your palm and make them flat.

Place these flat stuffing onto the back of half the shells. Form a sandwich and garnish with silver balls and enjoy.

What should you fill them with?

I used milk powder, sugar powder, desiccated coconut and milk to fill my Instant Macarons but you can use ANY filling you like!! Try butter cream, whipped ganache or a disk of ice cream!

Pro Tips For this Recipe

  • The Cookies!!!! That cookies have to be less SWEET and slight THICK. Too sweet or thin cookies will overpower your coconut macarons and the balance of sweet and crunchy will be all out of kilter.
  • Whatever syrup or crush u will use that has the medium consistency. I mean to say the consistency of the liquid is neither too much thick nor runny.
  • If you are not using Rose syrup, make sure to use diluted fruit crush. It helps the cookies soaking better.
  • If you over-soak the cookies in the syrup and they are too soggy, keep them in refrigerator before sandwiching to crisp them up.
  • I used Silver balls for garnish them but you can use any dry fruit, tuti fruity or even chocolate chips.

How Long can I store this Instant Macarons?

You can store them for a week in an airtight container in the refrigerator.
