Green moong is nature’s best offering for vegetarians. High in protein and yet easily digestible with the bonus of extra fibre makes this a super food. In the middle of these unforeseen times, while staying home we look for every alternative that’s contributing towards our wellbeing.
Diet and nutrition play an important role and if we neglect that, it’s highly unlikely to not get sick or ill once in a while. ‘Moong’ is an ideal ingredient for your regular diet; incredibly versatile, high in nutrients and aid in many ailments.
Given the current situation, I know a lot of us are having a difficult time procuring vegetables in this lock down. When I came up with this moong soup recipe, I was almost out of the veggies. So, I had to make to do with what I had at home.
Also, since I was planning to give this to my family who are just recovered from Covid symptoms too, I kept the spices and seasoning simple. But feel free to add extra spices as you wish.
My absolute favourite time to make this is in weeknights when I want to get my cooking done with soon and still feel like I have fed my family with something nutritious and delicious or immediately following a holiday where I have quite a bit of leftover Mooli Muthia or breads.
You can pair it with some Batata poha orinstant nylon khamanyou have got yourself a perfect combination! I definitely encourage you to make this, you won’t regret it.
Because moong is so good for your digestion, it also regulates the uric acid levels in your body which further helps bolster your immune response.

Can I make this soup with other lentils?
I haven’t tried this exact recipe with other lentils. But I feel red lentils will work well in the recipe. Do let me know if you give it a try!
Do Moong Need to Be Soaked Before Cooking ?
To shorten cooking times, you may soak the moong overnight or for 2-3 hours. However, they will cook in 10-15 minutes in pressure cooker and give off same flavour when doing so.

Wash moong thoroughly after checking for stones and add them to a large container and fill it with water until it is covering the moong by about 4 inches. Cover and set aside at room temperature overnight or for up to 2 hours.

Drain, and set aside.

Now Place the moong in a pressure cooker, smaller the cooker, the better. Add 4 cups water to moong, close cooker, fit the whistle and keep the flame on medium-high.

After one whistle, reduce flame to low until 2-3 more whistles are let out. Remove cooker from flame and let cool.

Once the cooker has cooled off, release the pressure and open the lid. The moong must have cooked to a soft consistency and not entirely mushy. (If they are not cooked enough, then keep them back with some water for one more whistle on a medium flame).

Once done, mash it roughly or puree with hand blender or mixer adding a cup of water.

And if you don’t have time for soaking then After washing you can directly cook them in a pressure cooker.

Heat ghee in a pan, add cumin seeds. Once the cumin seeds sizzles, add grated ginger, finely chopped green chillies, curry leaves and sauté for few seconds.

Turn off the flame and add asafoetida.

Now pour it over the mashed boiled moong and mix properly and adjust with required salt or water.

Add crushed black pepper and mix well.

Garnish with Coriander leaves and lemon juice.
Mix and serve hot.
