Athela Marcha or should I say No cook – super easy – Athela Marcha which is absolutely tasty and versatile dish that you need to have stocked up so that you can eat it whenever you want. If you love chilies – especially Green chilies and haven’t considered making it at home, you might want to read this super-duper easy recipe to create your very own instant Athela Marcha.

What does Athela Marcha actually means ?

Athela Marcha is a very popular Gujarati instant pickle, which is a must have in almost all Gujarati houses. Here Athela means pickled and Marcha is green chilies so you can say it Instant Pickled Green chilis. This Recipe doesn’t need cooking and can be made in minutes with very few basic ingredients which are easily available in each kitchen. 

These Marcha stays great up to 2-3 days in room temperature and for a long time in the refrigerator.
During winter we prefer to make Methi na Thepla or Aloo Paratha or anykind of stuffed parathas and those hot and crisp Parathas or yummy Theplas goes well with Yogurt, Green Chutney or Red Chutney and Athela Marcha

I remember my Mom and Aunties used to make big jars of lip smacking, spicy and tangy Athela Marcha which was served with Methi na Thepla or any stuffed Parathas, Roti, Khari Bhat or khichdi. The stock would last hardly the whole week. Now I also make these Marcha in my home as my family loves these crisp Athela Marcha so much.

The heart of this Marcha is obviously Green Chilies and the main pickling spices are Cumin Seeds and Fennel seeds so the pickle has a prominent taste of Cumin seeds and fennel seeds. You can crush them instantly and use to make this Marcha. The best part of making these at home is you can come up with your desired combinations and you have full control over whatever ingredients you use.

This Athela Marcha is so popular in Gujarat that it is also sold in most of the grocery stores and even in small restaurants. You can find small katoris or jars of this Athela Marcha kept on the dining table in every Gujarati home in any season.

I love making instant pickles, chutneys and other accomplishments regularly but this Athela Marcha is among the easiest one and my family’s most favorite. It goes very well with plain roti, Methi Ke Parathe, Aloo Paratha, poori, Mathri, Ganthiya, rice, khichdi or anything you want to have it with. 

These Athela Marcha adds an instant kick of flavours to any meal.

Have Fun with Athela Marcha:

A glass jar of this marcha is good but it becomes more amazing with Bajre ki roti or Jowar Roti and also goes well with Methi Na Thepla, Aloo Paratha, Muli Paratha, Khakra, Khichdi, Khari Bhat or Rice.
My son loves eating this Athela marcha with Nachos Chips.

I have added little jaggery in it but if you want to avoid jaggery then go ahead and make it jaggery free. But it taste amazing because the combination of jaggery and lemon juice makes these marcha more tempting.

An Instant Healthy Pickle:

These Athela Marcha dont have much oil and spices like other yearly pickles so you can eat them without worrying about too much oil and spice intake.

You can adjust the quantity of spices and chilies according to your preference, can add more chilies if you want.

 

After 2-3 days keep these Marcha refrigerated and enjoy till it last. If you want to make it in a large batch then you can increase the quantity of oil and lemon juice to increase the shelf life.

A Best Travel Companion:

This Athela Marcha or Pickled Green Chilies is very good option to carry along while traveling as there will be no fear of spoilage.

Addition of little lemon juice and oil can increase the shelf life of this Marcha.

Choose mildly Spicy Green Chilies if you prefer less spicy to make this Athela Marcha.

I have sliced green chilies lengthwise here but you can also chop it into roundels if you wish.

Valuable tips For Making these Instant Marcha:

  • While making this marcha make sure you wash and wipe green chilies well with a kitchen towel before adding all spices.
  • While adding Jaggery just smash it between your fingers to create a nice thick sauce.
  • Adjust the spices to your taste.
  • Reduce the use of Jaggery if you prefer less sweet your instant marcha.
  • Keep the chili mild if making it for kids.
  • Storing Athela Marcha at room temperature for 2 days is necessary because this gives time for chills to nicely marinate and absorb all the flavors.
  • Make sure to shake up the pickle jar during these 2 days.

Note:

  • You can skip jaggery if you want but the sweetness of jaggery balanced the taste. It combine with all the spices and lemon juice and makes Marcha more tastier and lip smacking.
  • Keep these Marcha refrigerated after 3-4 days.
  • It easily stays well for 1 month in the refrigerator but do keep mixing or shaking the jar twice a week.
  • Instead of slicing the chilies in long pieces you can chop it in bite size small pieces.
  • You can use any cooking oil but I prefer to use groundnut oil in it.
  • If you want to make it in a large batch then you can increase the quantity of oil and lemon juice to increase the shelf life.
