Whether you call it Papaya No Sambharo, Papaya Sambharo, Papaya salad, papaya chutney, it is an instant traditional Gujarati side dish made with Raw grated Papaya and only few spices. This Papaya Sambharo is crunchy, spicy, sweet and salty. And it makes a great side for Fafda and Jalebi.
Being a Gujju, I cannot live without Nylon Khaman, Thepla, Fafda-jalebi, Dhokla, Mooli Muthia, khandvi, methi na pudla, Jowar roti and the list goes on. With all these dishes, I like to have sambharo along with it, as it makes the dish very refreshing and tasty.
Before my marriage there is a famous Gujarati snacks shop, close to our home, would serve Khaman and fafda along with papaya no Sambharo and fried salty green chilies as a morning breakfast.
And his Papaya Sambharo is very famous and it sold out so quickly so on some weekend’s dad went early specially for the Papaya Sambharo (Lol) and would buy fafda, papaya no sambharo, fried n salty green chilies along with some desi ghee ke jalebi.
This used to be our favorite breakfast then and also now. The best part of this rich morning breakfast to me was the crunchy papaya sambharo with crispy fafda and sweet jalebis – a myriad of taste, textures and flavors.
FAFDA – PAPAYA NO SAMBHARO – JALEBI is a match made in heaven and Gujaratis treat themselves with this great combination on Dussehra.
What is Sambharo?
Sambharo actually is a Gujarati term which means side dish served with various Gujarati Snacks and meals. It is made from grated or sliced vegetables, and it is somewhere between completely raw or half cooked. It has the crunch of the vegetables.
Varieties:
You can also make Sambharo with other varieties of vegetables like raw papaya, carrots, cabbage, green chilies, tindora (ivy gourd), Ring gourd peels (Turiya ni chhal).
There are several ways to make and serve Sambharo.
There are 2 ways of cooking Papaya No Sambharo
Uncooked Sambharo –
Where grated papaya is just mixed with salt, red chili powder, coriander powder, Lemon(optional), and sugar(optional). Mix well and serve.
Cooked Sambharo –
Where grated raw papaya is sauteed for few seconds and then add spices and Khaman or Dhokla crumbs.
Today I am sharing the traditional cooked version of Kutchi Papaya Sambharo Recipe. This papaya sambharo recipe is quite simple and versatile. It can be stirred up in 1 minutes (From start to finish).
Papaya No Sambharo:
In the Papaya Sambharo recipe, I use grated raw papaya and temper it in oil with mustard seeds, turmeric powder, salt and crumbs of Instant Nylon Khaman (if you want the recipe of instant Nylon Khmana Recipe Click Here ).
It is stir-fried and cooked until the crunch of Raw papaya is maintained. You can also use sliced raw papaya instead of grated, but it takes more time to cook.

Serving:
Even though papaya no sambharo is served with fafda and gathiya, but you can also serve it with Dhokla, Khakhra, paratha, aloo Paratha and even with dal and chaval. You can eat this Sambharo as a side dish with your meal. Gujarati Thali is incomplete without Sambharo.
