No Cook and Extremely Easy Instant Athela Marcha is an absolutely tasty and versatile. It adds delicious taste in any meal and easily stays well for 1 month in the refrigerator.

Ingredients:
 100 g Green Chilies / Hari Mirch
 4 tbsp Cumin Seeds / jeera coarsely crushed
 4 tbsp Fennel Seeds / Saunf coarsely crushed
 1 tsp Turmeric Powder / Haldi Powder
 1 tsp Asafetida / Hing powder
 2 tbsp Finely chopped jaggery / gud
 4 tbsp Lemon Juice / Nimbu Ka Ras
 2 tbsp Cooking Oil
 Salt (namak) to taste
Instructions:

Wash chillies well and spread out on a kitchen towel to air dry thoroughly.

Remove the tops and slit each chilli lengthwise. Tap to remove any excess seeds.

Add chilies in a mixing bowl and add roughly crushed raw Cumin Seeds, roughly crushed raw Fennel Seeds, Salt, Turmeric, Asafetida, hopped Jaggery, Oil and Lemon juice.

Mix everything well. Toss gently.

Transfer to an airtight glass jar. Athela Marcha is now ready to be consumed.

You can start using the athela marcha immediately but the taste best after 1 hour.

Store in an air-tight container in the refrigerator for up to 1 month but do keep mixing or shaking the jar twice a week.

Enjoy with Plain roti, paratha, any stuffed paratha, khichdi, poori or anything of our choice.
