What is Bhapa Doi?
The word Bhapa means Steamed and Doi means curd/ yogurt.
Bhapa Doi is a Bengali dessert where the yogurt is creamed and then mixed with condensed milk. The mixture is then steamed or baked. You can use an oven and steam the yogurt in a water bath; else you can use a pressure cooker to steam the curd, you can use a normal pot to steam the yogurt and you can even use a microwave to steam.
It is a must-have sweet dish in every Bengali wedding and all the special occasions and celebrations.
Are Bhapa Doi and Mishti Doi same?
Most yogurt lovers have the misconception that these two are same. But, wait its answer is NO! Both are different. In Bengali Mishti means Sweet and doi means yogurt/curd so mishti doi is the sweetened yogurt whereas by steaming it becomes bhapa doi. So, from Mishti doi we can make Bhapa Doi but not possible to make misti doi from bhapa doi!

I’m obsessed with Mango and Yogurt in the summer season. And my love for these two encourages me to experiment this dessert. Also, the idea of baking the yogurt comes from the very famous Bengali recipe of bhapa doi.
Bhapa means to steam, however, instead of steaming this mango baked yogurt, I have baked it until just set. And the result is same, perfectly set yogurt. Mango is my fav so I dressed the bhapa doi with mango puree. And I’m done. So quick and simple dessert yet so gorgeous and delicious too.

So, what is this mouth-melting Mango Baked Yogurt made of:
Yogurt– The yogurt that I used for this recipe is home-made yogurt. You can also use store-bought yogurt or even Greek Yogurt, they’ll work just fine! Use whole milk yogurt for a rich taste if using homemade yogurt.
Cream – For this Mango baked yogurt, I used heavy cream. Fresh cream also works fine. So, any of the cream you can use in this dessert recipe.
Condensed milk – Condensed milk or milkmaid is what makes this mango dessert sweet. It also helps bring about a smoother texture in the yogurt. I used Nestle milkmaid here! It is the most commonly available in India.
Mango Puree – Fresh mangoes are the ingredient you just cannot miss for this recipe! The juiciness and sweetness of fresh mangoes is to die for. I recommend you to use fresh mangoes or frozen mango for this recipe and not canned ones.
I used fresh mango puree here. If you are using fresh mangoes, you may want to add some additional sugar depending on the sweetness of the mangoes. Also, in the fresh mango variety, stick to kesar or alphonso mangoes, they give prominent colour and flavour.

Yogurt – The Star ingredient of this Recipe
This recipe needs thick yogurt. Hung curd and Greek Yogurt gives best result. Hung curd is nothing but thick dense curd without any whey or water content in it. It’s quite easy to make at home but will add up little more time in the original recipe in that case.
How to make hung curd?
Always settle curd in an earthen pot if possible and use that curd after one day of settling it. Store it in the refrigerator to allow the pot to soak the moisture.Now place the curd over a Cheesecloth/ Maslin and unite all the ends of the cloth.
Now hang the cloth along with the curd for 1 hour atleast to remove the moisture from the Curd. Once the curd is without whey, take it in a bowl and use it.

What if I don’t have Microwave oven at home?
No oven? no problem!
Use Steamer or pressure cooker or use can use a pot to create a steamer on the gas stove. After you chill the yogurt, it sets to a firm consistency.
How to make baked yogurt with traditional steaming method:
Take the mixture in a round-shaped steel bowl with lid or katori. In case the bowl is not having a lid, cover it with aluminium foil and tie with a string. Now take a deep bottom vessel and place a stand inside. Pour hot water in the vessel and place all the small katoris over the stand.
The water should cover the 2/3 length of the container. Cover the Vessel with a lid and steam the yogurt for 20-25 minutes on low flame. Once baked open the lid and remove all the katoris or bowls and cool them completely. Refrigerate them before further process.
Recipe Chef Notes + Tips
No water should be there in the hung curd if preparing the hung curd at home. All water from the curd should be drained out.
Always prefer to use fresh curds that is not sour at all, otherwise the dessert will not taste very good.
If you don’t have an oven, use a steamer or pressure cooker as well. You can use a big pot with water in it to steam the baked yogurt.
If fresh mango is not available you can use frozen or tinned mango too.
Note that you shouldn’t overcook the yogurt as it firms up when it cools as well. If you do overcook it, it will end up tasting and feeling like dry paneer/tofu.
Baking time may vary depending upon the size of vessel.
Cherries and mint leaves are entirely optional. It is only added as a garnish and won’t alter the taste of the pudding much.
Heavy cream is optional as well. It will give the dessert a richer taste but the yogurt sets just as great with fresh cream also.
You can used pulp from fresh mangoes or from frozen one or even readymade. If you need the final dish to be sweeter, feel free to stir in some sugar.

Now start whisking the yogurt with a whisk gently.

Then add condensed milk and again whisk well.

Finally add cream into it and mix all the ingredients together using a whisk.

Take oven proof vessels or ramekins and pour yogurt mixture in them carefully, leaving ½ inch space on the top of the vessel or ramekins.

Now arrange the ramekins in a large baking tray. Fill the half of the tray with steaming hot water in such a way that bottom of yogurt filled vessels are dipped in water.

Now bake the yogurt in preheated 120 C oven for 15-20 minutes or until yogurt is set.

For confirmation use a toothpick and insert in the middle of the vessel, if thin liquid sticks to the toothpick bake for another 5 mins. Even the middle is little wobbly it will be set once cooled completely.

Once it is baked, remove yogurt from oven and bring to room temperature and later refrigerate for 1 hour at least.
