Goodness of Lauki and Reduced milk along with Milkmaid, Saffron, Cardamom, Almonds and Pistachio makes for this delectable Lauki Ki Kulfi that you can easily prepare at home in few minutes! They are super easy to make and they are dessert lover’s dream and such a wonderful treat!
This rich frozen dessert – Lauki Ki Kulfis were so much fun to assemble that I can’t wait to do more versions. Plus, I have many homegrown Lauki (Bottle Guards) lying in the fridge, waiting to be used. BONUS — few easily available ingredients were used, which makes these Lauki Ki Kulfis way more fantastic.
A Lauki hater is now a Lauki Lover !
I literally hated Lauki (Bottle Guard) in my childhood and I still remember whenever I used to see a Lauki in the fridge the next few days were used to be very scary for me. The fear of that Lauki sabji gave me sleepless nights too in my college days. So you can imagine how much I hated this Lauki!
But suddenly one day this Lauki hater (me obviously) became Partially Lauki Lover, when I tasted Lauki Ka Halwa first time in a marriage reception party. Partially means I still hate any Lauki sabjis but I love desserts made out of it.

The happiness of having lots of Laukis (Bottle Guard)
So being a partially Lauki lover, imagine my excitement when I saw 5-6 Laukis (Bottle guards) in our building’s kitchen garden. On the outside I was all poised as I reached for the Laukis and grabbed it before anyone else could. But inside I was jumping and doing the happy dance.
I got it home and all I could think about was how I wanted to use them up. Usually I didn’t want to look forward to see Laukis. But this time I wanted to try cooking with them and Since I loved the dessert of Lauki I tried several recipes to prepare it at home and the success rate was quite good
Lauki Ki Kulfi Recipe
I even experimented this Lauki Ki Kulfis on unexpected guests also and every time they were surprised by the taste. This encouraged me to further enrich the recipe so that it suits all.
I roasted the Lauki (Bottle Guard) first in ghee before boiling it. Saffron strands and milkmaid mixed with milky lauki mixture gives additional richness. Almond and Pistachio flakes looked beautiful over the kulfi molds in the end.

What if I don’t have Kulfi Moulds?
Don’t worry! Every problem has solutions and alternatives.
You can use disposable paper cups or stainless-steel glasses as moulds if you don’t find the original ones. Insert the sticks only when the kulfi is semi-frozen. If you’re using flat moulds, use aluminum foil to cover it.
Tips to make Creamy and Mouth melting Lauki Ki Kulfi
- Always use Fresh and Tender Lauki. It gives mouth melting and creamy texture to your Lauki Kulfi.
- For simmering the milk, use a wide pot with a large surface area to hasten the process.
- Here I roasted the Lauki before boiling in milk – this is important step because roasting the Lauki in ghee gives extra flavor and also the Lauki become more tender.
- While boiling the milk, keep stirring it frequently else it will burn. Sugar helps in scalding down.
- If you don’t want to use Milkmaid, make sure the Milk you are using is full fat milk.
- Keep stirring the mixture continuously and cook the in low flame.
- Make sure the consistency of the final mixture is not too thick or too runny.
- Cool the mixture before you pour it into moulds. Also, you can place the mixture in the refrigerator for about an hour so as to avoid the formation of ice crystals on freezing.
- You will require Kulfi moulds or Paper cups/glass for this recipe, so keep them ready in advance.
Pro Tip – Use Fresh and Tender Lauki and roast it in ghee before boiling in milk, it gives extra flavour and richness to your Kulfis.
Lauki Ki Kulfi
The creamy & mouth melting Lauki Ki Kulfi recipe require few ingredients to come together ! This mouth melting summer dessert prepared in 25 min.

Wash and peel the skin of Lauki (Bottle Gourd) & grate it,
Take a heavy-bottomed sauce pan and bring it on medium heat. Once the pan is sufficiently hot, add ghee and a whole cardamom in it. Then add grated Lauki
(Bottle Guard) and cook for 2 mins so that the water evaporates and the Lauki become soft.
Pour milk in it. Let it come to a boil and then reduce heat so that the milk can simmer. However, keep stirring continuously.
Cook the milk and Lauki for roughly about 10-15 minutes (stirring continuously) or till it is reduced and has a thick consistency.
Then pour in the Milkmaid and Saffron strands and mix completely and again cook for 2 minutes
Now, it's time to add in Milk Powder and Sugar in the mixture while it is still hot and give it a nice stir. Eventually, add the cardamom powder as well and cook for last 2 minutes.
Once the cooking part is done, add Almond and Pistachio Flakes and switch off the flame and allow the mixture to cool.
Now, the final step is to set the Kulfi. For this, transfer the Kulfi mixture into Kulfi moulds and cover it. Place these moulds inside a freezer and let them stay for at least 7-8 hours.
In order to savor the delicious summer dessert, you'd have to wait for a few hours till it is set completely. Once it is done, unmould the Kulfi and savor it with kids, Family and Friends.
