1] COOK – In a heavy bottom pan, melt butter, add garlic, flour n whisk and slowly add milk and stir until smooth, thick and bubbly. Finish it with salt, pepper and cheese. Remove from heat and stir until cheese melts.
2] COOL – Let it cool for a minute.

To store this white sauce, you have to cool it to room temperature then transfer to an airtight glass or plastic jar, cover it with a lid and refrigerate up to 4-5 days. The sauce will thicken more as it cools, you may notice a grainy or lumpy texture. Revive the sauce by slowly reheating over low heat, stirring constantly. As the sauce warms, you can add a little milk to help return it to a thick and smooth consistency.

Melt the butter in a saucepan over low heat and then add in the flour, stirring until thick and pasty (do not let it brown). You'll end up with a pasty white clump, essentially.
Now slowly add milk, whisking it all together and stirring constantly to avoid lumps. whisking constantly until smooth, thickened, and bubbly.
Add in the finely grated garlic, salt, and allow sauce to simmer for few seconds.
Stir in the freshly grated parmesan cheese until the cheese has melted and is well incorporated.
Remove from heat and continue whisking just until cheese is melted and white pizza sauce is smooth then set aside to cool before using for pizza or pasta.
Do not boil after adding cheese otherwise white pizza sauce may curdle. Once cooled, cover and refrigerate up to 5 days.
