Cabbage Patties Recipe – A Perfect Healthy and Quick Breakfast Recipe
It’s really important to start your day with a good meal. A hearty, satisfying morning meal sets the tone for the entire day. These Healthy and crispy Cabbage Patties Recipe is such an innovative way to serve cabbage for breakfast or brunch.
Last Sunday I made this recipe, and today I made it again because I like to make recipes more than once before publishing them here. We really enjoy these cabbage patties! My entire family agrees that this should definitely be part of our breakfast rotation.
In this cabbage patties recipe, Chopped Cabbage, onion, garlic, ginger and coriander leaves are bound together with nutty chickpea flour and cornflour and spices to create these healthy and crispy patties.
This Cabbage Patties Recipe is something that we eat a variation of at home every weekend! so I loved that I could share a piece of my kitchen with followers worldwide!
I wanted these cabbage patties to remain crispy with beautiful golden colour, keeping the batter balanced with vegetables and flours. In order to do this, I mix equal amount of both flour with chopped vegetables and spices and rest the Pattie mixture for around 5 minutes. This way, flour absorb excess moisture and make the mixture dry and gives crispiness to the patties.
Fresh coriander, garlic and green chilies bring beautiful fresh flavours to this dish, which are reflected in the instant ketchup chutney – it’s a fantastic pairing.
The ingredients you’ll need
You’ll only need a few simple ingredients to make it! The exact measurements are included in the recipe card below. Here’s an overview of what you’ll need:
Fresh cabbage: I use green cabbage in this recipe. I used vegetable chopper to chop cabbage, it gives equal cutting and also saves time.
Finely chopped onion: Again, I used chopper to chop onions. If you don’t eat onions, omit them – I added them mainly for colour.
Chopped Green chilies, Garlic & Ginger: I like my food little spicy so I added some green chillies. It is purely optional. if you use freshly chopped garlic and ginger, it will taste better.
Fresh coriander leaves: Coriander leaves gives nice colour and freshness to the patties.
Salt & black pepper: Always add freshly ground black pepper, it gives prominent flavour to the patties.
Red chilli powder: This is not crucial, and I mostly add it for colour. But it gives a nice layer of flavor without overwhelming the dish.
Gram flour/Besan: I used Besan here in this recipe as it helps to absorb excess moisture and also gives a binding to the vegetables.
Corn flour: I also added corn flour as it makes patties crispier.
Oil for roasting: I love cooking with refined oil. But you can use mustard oil, you can use peanut oil instead. Butter/ghee is another tasty option.

Mix all the ingredients – cabbage, onion, garlic, ginger, green chilies, fresh coriander leaves, black pepper powder, salt and red chili powder in a bowl.
Add Besan/gram flour and corn flour and again mix properly.
Rest for 5 Minutes so all the ingredients are properly incorporated with each other.
Give Shape of Patties With the help of any Ring mould. (Watch video tutorial)
Roast the patties in oil until golden-brown, 2-3 minutes per side.
Why I used Ring Mould?
Actually, using a ring mould will accomplish two things: (1) ensure that you will get equally-sized patties that are the perfect diameter and thickness and (2) you will get evenly cooked patties with perfect texture and colour.

Expert Tip
The main issue that arises when making these cabbage patties is that you really do need to gently roast the cabbage over low heat. If the heat is too high and the tawa gets too hot, the bottom side of Pattie might burn and it will remain uncooked from inside. So, make sure you keep the heat to low.

How do I prep cabbage for patties?
Remove the outer leaves and rinse them under running water. This will help get rid of any insects hiding inside the cabbage. Then dry it with kitchen towel. After that you need to do is cut the cabbage in half vertically along the stem. Then, lay the flat side of the cabbage down on a cutting board and cut it into your desired size.
I used vegetable chopper to chop this cabbage, it gives equal cutting and also saves time. You can use food processor also.
How long should I roast patties?
Roast them for 2-3 minutes or until it’s golden brown per side.
What if I don’t have Ring mould?
Use a cookie cutter or a jar lid. Whatever you have available at your place.
Or simply you can make them like chillas or pancakes.

For Cabbage Patties:

For Instant Ketchup Chutney:
½cupTomato Ketchup (Hot & Spicy)
2tbspChopped Onion
1tspChopped Green chilies
1tspChopped Garlic
2tbspChopped Fresh Corianders
¼tspSalt
½tspBlack Pepper Powder
Instructions:
For making Cabbage Patties:

Wash the cabbage properly and chop it using a knife or a chopper and transfer it in a big mixing bowl.

Add chopped onion, green chili, chopped garlic and ginger, chopped fresh coriander leaves.

Now add Black pepper powder, Kashmiri red chili powder and salt and mix all together with spatula.

Add Besan/ gram flour and cornflour in batches and combine thoroughly.

Allow to rest for 5 minutes.

Heat a large non-stick flat tawa over low heat.

Place a ring mould on a non-stick tawa. (don’t forget to grease the ring with oil)

Now place the two tbsp cabbage mixture in the centre of the ring.
Carefully press down with the spoon so that the mixture fills all the gaps in the ring.

Gently pull the mould over and push the patty out of the mould.

Roast on low heat until golden-brown, 2-3 minutes per side, flip and cook on the other side.

Keep in a warm place while you repeat the same process for the remaining mixture.

Take tomato ketchup in a bowl.

Add chopped onion, green chili, chopped garlic and chopped fresh coriander leaves.
