Winter is here finally and this season has been all about experimenting with recipes I haven’t tried making before and I’ve been whipping up some delicious and obviously healthy treats in my kitchen! I am so happy to share this Khajoor pak recipe today, what is better than a piece on a winter morning? A dessert with all kinds of nuts and winter spices incorporated in it to keep you all warm with some warm milk of course!

What is Khajoor Pak / Khajur Pak?

With just few basic ingredients you can get these squares that will keep you full for long. You can make and store these in airtight jars to relish for long.

This khajur pak recipe is healthy and nutritious as well as diabetic-friendly. It is crunchy and mouth melting and best served with a glass of warm milk in winter mornings.

When special occasions are fast approaching in winter and I’ve run out of time to whip up something sweet, it’s quick and simple khajoor pak to the rescue!

Ingredients of this Khajoor Pak Recipe

The ingredients of this khajoor pak are not that tricky or twisted. Just make sure of the following to get the right balance of flavors and the perfect dessert!

  • Using soft and good quality dates (khajoor) is really important for a dessert like this. This Khajoor pak actually rest on dates to give off the major flavor. Low-quality dates are super-sweet or have too many harmful additives.
  • Now, using dry fruits (I used Cashews, Almonds & Pistachio) of rather good quality is also important. If you go for stale or low-quality nuts, it changes everything because of a rather bitter taste.
  • The best ghee for all your desserts, according to me, is Desi ghee. It gives an aromatic flavor and a shiny texture.

  • Using a good dose of spices in my desserts is my favorite thing about winter and this khajoor pak is no exception! Ginger powder adds such a delicious flavor to this recipe and you can actually add any other spice you like – cinnamon powder or nutmeg. Whatever suits your taste!

  • Again, a good quality of desiccated coconut is also important. Now the first thing people think of when they see desiccated coconut in a recipe is that what does it actually mean. Desiccated coconut is small and extremely fine coconut flakes, which will be beautifully bound into dates after being mixed in with dry fruits and ghee.

  • You can also use Fresh grated coconut in this khajoor pak recipe.

  • To give this khajoor pak that an extra ordinary flavor, I have added dried rose petals in this khajoor pak recipe and it’s truly a great dessert if you’re planning to make something healthy for your kids and family this winter

Dates are powerhouses of energy. It helps to fight most infections and allergies, and is used to treat sleep disorders. Dates boosts energy as well as improves hemoglobin levels. As it is packed with fiber, dates prevent constipation.    

Dates are known to produce heat in the body and that’s why it consumed popularly during the winters. A good source of essential vitamins and minerals, dates are rich in calcium, iron, phosphorus, fiber and potassium.

    

Since dates are rich in natural sugars, they provide an instantaneous energy boost, which is why they are significant during the fasting period of Ramzan. They are perfect to break the fast as they fuel our body with instant energy and help in digestion of other foods we consume.

Why won’t my khajoor pak not set?

If you not roast the dates properly or the ratio of dates and binding ingredients (in this recipe I used desiccated coconut and dry fruits powder) is not balanced, it will not set. Why is my khajoor pak chewy?

Khajur pak can turn chewy if you overcook it. Be sure to cook the dates and nuts mixture over a very low heat. Stir constantly without stopping. Keep an eye on the texture. It is ready when the mixture forms a slack and cohesive mass that comes away from the sides of the pan easily.

Why is my khajoor pak sticky?

Sticky khajur pak can be down to three separate issues:

  • The dates need to cook for longer.
  • Not enough binding ingredients in the mixture.
  • The dates is not of good quality.

Ingredients:
 500 g Date (seedless)
 50 g Ghee
 25 g Chopped Cashew
 25 g Chopped Almonds
 25 g Chopped Pistachio
 25 g Desiccated coconut
 ½ cup Dry fruits Powder
 1 tbsp Sonth Powder (dry ginger powder)
 ¼ cup Rose Petals (dried)

Instructions:
1

First, deseed the dates (Khajur) & make small pieces from it and keep aside.

In a large kadai heat 1 tbsp ghee and roast chopped cashew, almonds and pistachio.

As soon as the mixture becomes a light pinkish color and crunchy, switch the heat off.

Add desiccated coconut and dry fruits powder and continue to stir for a further minute to temper the residual heat.

The mixture will be extremely hot and it will continue to cook even after you switch the heat off.

To the same kadahi, add remaining ghee and dates and mash gently.

Keep stirring till it gets really soft and leaves the sides.

Once it looks soft and perfectly cooked, add in the sonth powder (dry ginger powder) and mix well.

Add the roasted nuts and dried rose petals and again mix it well.

Once all mixed well turn of the gas.

Quickly pour the mixture into the greased tray.

Lightly press the mixture in with a spatula, ensuring the surface is as even as you can get it.

Allow the mixture to cool off a little and then make square pieces of khajur pak using knife.
